Flavorful ground beef meatballs seasoned with fajita spices, bell peppers, onions, and Monterey Jack cheese, seared to perfection with crispy edges. Great for meal prep or a fajita platter.
In a large mixing bowl, combine the 2 finely diced, charred, and completely cooled bell peppers and 1 small yellow onion, 1 tablespoon of minced garlic, 2 whisked eggs, 2 pounds of 85/15 ground beef, 3 tablespoons of flour, 8 ounces of shredded Monterey Jack cheese, 1 packet of fajita seasoning, beef bouillon powder, and Sazon. Lightly mix all ingredients together. Take about 2 tablespoons worth of the mixture and roll it into meatballs. Sear the meatballs on all sides in the same pan used for the veggies, on a little bit below medium heat. Add more oil if necessary while searing. Continue searing until the cheese crisps on the outside of the meatballs; if the cheese is still sticking, the meatballs are not ready to flip.
