Delicious and easy-to-make steak fajita meatballs, perfect for meal prep or as part of a fajita platter. They are made with ground beef, bell peppers, onion, cheese, and fajita seasoning, seared to perfection with crispy cheese on the outside.
In a large mixing bowl add: 2 finely diced, charred, and completely cooled bell peppers and 1 small yellow onion, 1 tablespoon of minced garlic, 2 whisked eggs, 2 pounds of 85/15 ground beef, 3 tablespoons of flour, 8 ounces of shredded Monterey Jack cheese, 1 packet of fajita seasoning, beef bouillon powder, and Sazon. (Remember to always make a test meatball to see if you seasoned it enough). Lightly mix it all together. Then get about 2 tablespoons worth of the mixture, and roll it into meatballs. Sear these on all sides in the same pan as the veggies (on a little bit below medium heat), and make sure to add more oil if necessary. The best part about these is that the cheese crisps on the outside of the meatballs! (If the cheese is still sticking, that means the meatballs aren’t ready to flip.)
