Pumpkin Chocolate Chip Pancakes🥞🎃🍫 Start out melting 4 tablespoons of butter in a pan on medium low until it turns brown, then set it aside to cool. Then in a large bowl add: -One 15 ounce can of Pumpkin -2 egg yolks (separated from the whites) -1 2/3 cup of room temperature buttermilk -1 tablespoon of vanilla extract -your cooled down brown butter Whisk this together. Then get the egg whites and whisk them by hand or with an electric mixer until soft peaks form. Lightly fold them into your batter (this is going to make them extra fluffy) Then in a separate bowl add: -2.5 cups of flour (spooned in, not packed) -3 tablespoons of brown sugar -2.5 teaspoons of baking powder -1/2 teaspoon baking soda -2 teaspoons of cinnamon -1/2 teaspoon of nutmeg -a pinch of salt Whisk this together, then lightly fold it into your wet ingredients, without over mixing. Then heat a pan to about medium low and melt some butter. Add in about a half cup of your batter, and top it with your favorite chocolate chips. When you start to see some bubbles, flip your pancake and cook it to your liking (making sure to add more butter to the pan in between each pancake) When serving, top your pancakes with maple syrup and Vanilla Bean Butter. For the Vanilla Bean Butter, Just mix 4 tablespoons of softened butter with about a half tablespoon of vanilla bean paste. Enjoy💜 #recipe #food #cooking #pancakes #pumpkin #breakfast #brunch
