1. Get 4 to 6 cod filets (or chicken breasts) and pat them dry with a paper towel.
2. In a plate, add 1 part seasoned breadcrumbs, 1 part grated Parmesan, and Old Bay seasoning.
3. Add flour to a separate plate and season it with Old Bay as well.
4. Coat the cod in the flour, then whisked eggs, and pack on the breadcrumbs.
5. Shallow fry on medium heat until golden brown.
6. For the sauce, in a pan on medium low, add 4 tablespoons of butter.
7. Once the butter is melted, add 1.5 tablespoons of flour and whisk it in.
8. Then add 4 cloves of minced garlic, 1.5 cups of heavy whipping cream, 1/2 cup of freshly shredded Parmesan cheese, the zest of 1 lemon, and salt and pepper to taste.
9. If the sauce gets too thick while it’s cooking, add more cream.
10. Top off the cod with your lemon pepper sauce, some fresh parsley, and a squeeze of lemon. Enjoy!
