Lemon Chicken Orzo Soup 🍲🍋 Add some olive oil to a large pot on medium heat. Then add 1.5 to 2 pounds of bone-in, skin-on chicken. (I prefer thighs, but breasts work as well.) Brown them on each side and then set them aside. (Don’t worry about cooking them all the way through.) Then in the same pot, add: -2 medium yellow onions (diced) -2 cups of sliced carrots -2 cups of chopped celery -2 tablespoons of minced garlic -1 tablespoon (each) of fresh and finely chopped rosemary, oregano and thyme -10 cups of chicken broth Then add all of your chicken back in and season with: -chicken bouillon powder -lemon pepper -black pepper -cayenne pepper (if you want some spice.) Then cover the pot, and once it comes to a boil, turn the heat down to medium-low and let it cook for about 1.5 hours. Then remove the chicken, and add in 1 cup of uncooked orzo. Shred and debone the chicken and add it back in. Then squeeze in the juice from half of a lemon. Cook until orzo is al dente. (Feel free to add in more chicken broth if too much was absorbed while the orzo cooked.) When serving, top it off with: -fresh parsley and dill -Parmesan cheese -and a scoop of ricotta cheese Enjoy💜 #recipe #soup #food #foodie #cozy
