Italian Wedding Soup🍲♥️ In a large bowl add: -8 ounces of ground beef -8 ounces of ground Italian sausage -1/3 cup of finely diced onion -1/3 cup of finely chopped fresh parsley -1/4 cup of chopped oregano -1 tablespoon of minced garlic -1/2 cup of seasoned breadcrumbs -1 whisked egg -1/2 cup of grated Parmesan -season with whatever you’d like (I used Adobo and salt & pepper) Then lightly mix it all together (without over mashing the meat) Measure out about 1 tablespoon of the meat, and roll it into little meatballs. Then in large pot on medium heat with oil, brown them on both sides and then set them aside. Then in that same pot, add: -2 tablespoons of olive oil -2 cups of diced onion -1 cup of diced carrots -1 cup of diced celery -2 tablespoons of minced garlic Cook until the onions are soft and then add: -1/2 cup of dry white wine -5 cups of chicken stock -5 cups of beef stock Turn the heat up to medium high and then season with chicken bouillon powder, and salt and pepper to taste. Once the soup comes to boil, add 1 cup of Acini di Pepe (you can also use other small pastas such as: Ditalini, Orzo, and Pastina) Then add in your meatballs, and cook until the pasta is al dente. Turn off the heat, and add in about half of an 8 ounce bag of fresh spinach (roughly chopped.) Serve immediately after adding the spinach and top it off with some Parmesan cheese.
