A festive stuffing recipe featuring ground chorizo, sautéed vegetables, and a blend of savory spices, baked to perfection and topped with melted cheese.
In a pan on medium heat with oil, add 1 lb of ground chorizo (remove from casings if needed). Cook until browned and set aside in a large mixing bowl. In the same pan, add 1 stick of butter, 2 diced onions, 1 diced bell pepper, and 8 cloves of minced garlic. Cook until the onions run clear, then add everything to the same bowl as the chorizo. Then add fresh oregano and 5 finely chopped sage leaves, 3 cups of chicken broth, Sazon, Adobo, 1 whisked egg, and 8 cups of stuffing cubes. Mix until well combined. Grease a 9x13 baking dish with butter, and add the mixture in. Bake at 350 degrees Fahrenheit for 60 minutes. When done, top with a little Manchego or Monterey Jack cheese and melt it under the broiler. Enjoy!
