Chicken Eggplant Parmesan 🍆🐔🍝 Start out by getting an eggplant and slicing it into thin rounds. Then add water to a bowl with some salt and soak the eggplant for 1 to 2 hours, patting them dry when they’re done. Then add flour to one plate, and in another bowl add 1 part Italian seasoned breadcrumbs and 1 part grated Parmesan. Then season both the flour and breadcrumbs, (I’m using Adobo and Sazon) Then dip your eggplants into the flour, then whisked egg, and pack on the breadcrumbs. Fry on medium heat until golden brown letting them rest on a paper towel on cooling rack. Then get boneless skinless chicken breast and pound them out as thin as possible. You’re going to use the exact same steps as the eggplant to bread and fry the chicken. Once they’re done, add the chicken to a baking sheet and top it with a layer of marinara, fresh sliced mozzarella, your fried eggplant, and top it off with another layer of marinara and fresh mozzarella. Then bake in the oven at 400 degrees for about 10 minutes or until the cheese is fully melted. I like to serve this with pasta, and top it all off with Parmesan cheese and fresh basil.
