A recipe for Buffalo Chicken Taquitos made with shredded rotisserie chicken, Buffalo sauce, mozzarella cheese, and seasonings, deep-fried until golden brown and served with blue cheese or ranch dressing. Perfect for appetizers or game day snacks.
Shred and debone a store-bought rotisserie chicken, and add it to a bowl. Mix in 1.5 cups of Buffalo sauce, 4 cups of shredded mozzarella cheese, and your preferred seasonings (e.g., garlic powder, smoked paprika, Sazon).
Get about 35 corn tortillas and add them to a plate. Cover and cook in the microwave for at least 30 seconds, or until you can completely bend the tortilla without it breaking in half. Re-heat the tortillas as needed when assembling the Taquitos, as they need to be warm when rolling them or else they’ll crumble.
Add your chicken filling to one half of a warm tortilla, then roll it up tight and seal with a toothpick. Repeat for all tortillas.
Deep fry the taquitos on medium heat until golden brown, then let them rest on a cooling rack. Remove the toothpicks and serve with a side of blue cheese or ranch dressing. Enjoy!
