A flavorful buffalo chicken salad recipe, starting with cooked chicken breast, a creamy buffalo ranch dressing, and crunchy minced celery and red onion. Perfect for platters or sandwiches.
Start by getting 2 pounds of cooked chicken breast. (If using raw chicken breasts, you’ll need 2.5-2.75 lbs of raw chicken to get around 2 lbs of cooked meat.) Shred the cooked chicken. You can pulse blend it in a food processor for an extra smooth texture.
For the dressing, combine 1.5 cups of mayo, 3/4 cup of buffalo sauce, 1 packet of ranch seasoning, cayenne pepper (if desired for more spice), and paprika. Mix these ingredients together thoroughly.
Combine the dressing with the shredded chicken. Then, fold in 1 cup of minced celery and 1/2 cup of minced red onion.
Taste the chicken salad and add more salt and buffalo sauce if needed, according to your preference. (Note: The author ended up adding 1 cup of buffalo sauce in total.)
Enjoy your buffalo chicken salad, perhaps on a platter with quick pickled red cabbage, sweet peppers, sliced carrots, celery sticks, buffalo wing pretzel crisps, and sliced cucumbers.
