Beef Stroganoff🥩🍄🟫 Start out by getting 2 pounds of filet (or top sirloin) and cut it into thin slices against the grain. (You want to slices to look like an accordion.) Season with salt and pepper. Then add 3 tablespoons of high heat oil to a skillet on medium-high heat. Give the steak a quick sear in batches, leaving some parts rare if you’re using filets. (If you’re using top sirloin, lightly sear it on both sides.) Set the meat aside and let the pan cool down to medium heat. Add a little more oil, then add: -2 shallots (finely diced) -1 tablespoon of minced garlic -1 pound of Portobello mushrooms (with the stems removed, and sliced.) Cook until the liquid reduces from the mushrooms. Then add: -1 tablespoon of fresh thyme -1 teaspoon of paprika -1 tablespoon of Dijon mustard -3/4 cup of dry white wine Let the wine reduce by half, then add in: -1.5 cups of beef stock -2 tablespoons of Worcestershire sauce Let this reduce for about 10 minutes, then add in a 1/2 cup of heavy whipping cream, and cook for about 5 minutes to slightly thicken. Then turn the heat down to medium low, and add in: -3/4 cup of room temperature sour cream -3 tablespoons of butter -season with pepper and soy sauce to taste. (Regular soy sauce is fine, but use dark soy sauce if you want it to have a nice Caramel color) The sauce should be well reduced at this point, but if it’s not, you can add a cornstarch slurry to thicken it to your liking. (Start with 1 teaspoon cornstarch mixed with 1 teaspoon water, and add more if necessary. The sauce should lightly cling to a spoon.) Then add in all of your steak, letting it simmer for a couple of minutes in sauce. Add in some fresh parsley right before serving. Beef Stroganoff is best served with egg noodles tossed in some butter, but it’s also great with mashed potatoes. Enjoy💜 #recipe #dinner #beefstroganoff #steak #food #foodie
